Soup vegetables spelled

  • 120 gr. spelled or wheat
  • 1 untreated lemon
  • 2 cloves garlic
  • 3 cébettes or onions
  • 3 carrots
  • 1 leek
  • 4 tomatoes
  • 2 celery stalks
  • 120 gr. green beans
  • 1 cube of vegetable broth
  • 3 tsp. d tablespoons (olive oil
  • 3 tsp. soup cream
  • salt, pepper

  1. In a pot, add 50 cl. water, salt, pepper and bring to a boil, pour in the spelled. Let boil for 1 min. then remove from heat and allow to inflate covered for 2 h. (if you use wheat, soaking time is not useful, simply add the vegetables).
     
  2. Wash vegetables and peel them. Cut the leek and cébettes pieces, carrots and celery stalks into small slices. Immerse tomatoes 1 min. in boiling water, peel them and chop them. Mix the bouillon cube in 50 cl. warm water.
     
  3. Gently heat the olive oil in a frying pan and put it back to cébettes or onions for 3 minutes. Put them in the pot with the spelled. Add the vegetables (except green beans) and chopped garlic cloves. Add the vegetable broth, salt and pepper. Cook in small stocks for 15 minutes.
     
  4. Add the green beans and lemon zest, finely grated. Let simmer for another 15 minutes. Just before serving, add lemon juice in the bowl, and 3 tablespoons. tablespoons of cream. Serve immediately.
