The sanded paste

For 15 Shortbread approx. 1 or pie for 6 pers.


  • 250 gr. flour
  • 125 gr. butter
  • 125 gr. powdered sugar
  • 1 egg
  • 1 pinch of salt

 

 


 

 

  1. 01 / Sift flour and sugar directly on the work plan or in a cul-de-poule. With the back of your hand, make a well "fountain.
     
  2. 02 / Cut butter (cold but not hard) into small pieces. Mix the pieces of butter gently in the flour and sugar, so as to coat them with flour. Crush them strongly fingertips. Sand mix by rubbing between your hands to obtain a fine powder. (very close to the texture of the sand).
     
  3. 03 / With the sanding, to make a well. Add salt and liquid (or yellow egg + water) lightly whipped with a fork. Gradually incorporate the whole.
     
  4. Crush quickly with both hands, without kneading. Stop when the dough is smooth and does more. Gather the dough and lightly flour. Like the pastry let stand in refrigerator at least 1 hour.
