Pets de nonne de Baumes-les Dames

  • 75 gr. flour
  • 40 gr. butter
  • 60 gr. sugar
  • 2 eggs
  • 1 / 8 l. water
  • 2 tsp. Coffee poudre1 sugar pinch of salt

  1. Bring water to a boil with sugar, salt and butter cut into pieces. From the broth first remove from heat.
     
  2. Take at once the flour and stir vigorously with the wooden spatula until the dough forms a ball that detaches from the walls of the pot.
     
  3. Then remove from heat add one after the other eggs in the omelet. Whisk well until a smooth thick paste. Form balls the size of a walnut, by dragging them in very hot frying. The pets de nonne will begin to inflate. Gradually increase the intensity of the fire during cooking.
     
  4. Turn them with a fork, the pets de nonne must be a pretty blond golden on all sides (they are cooked when they turn themselves in frying. Serve them warm, sprinkled with sugar.
