
To achieve a good coffee you must follow some basic rules. Select good freshly roasted beans, or a mixture made by the roaster, or a mixture made by yourself.
If you use packaged coffee, choose the packages that keep the vacuum and filled with a unidirectional valve which allows the coffee to breathe without losing its flavor.
It should not be grinding the coffee in advance, it would lose its flavor. Water grinding a spoon of cold water to swell and exalt the coffee aroma, before pouring the boiling water. The quantity of coffee is 10 to 12 gr. per cup (1 tsp. tablespoons rase).
Do not boil water, because it loses the oxygen and becomes flat.
If your coffee is not electric, the better to boil before using. In the case or from time to time you use a silver coffee pot, let the clock, a little coffee, and before use, discard it and rinse the coffee pot with boiling water.
The coffee must be of perfect cleanliness, to remove the oil left by coffee, the oil rancid and can give an unpleasant taste in coffee. Rinse well to remove traces of dish soap. If you do not often your coffee maker, after cleaning to drop a sugar cube, this will avoid unpleasant odors. When using it you just have to remove the piece of sugar.
Use water or limestone, or loaded into the tasting chlorine or sulfur or iron, because the tastes are passed on coffee. You can use the source water. milling of coffee varies depending on the coffee used, each process requires a special grinding.
More grinding is fine, plus the coffee is strong and it has more flavor, plus it is economical. A fine grind will need less of coffee per volume of water. Do not boil the coffee, or warm. Do not use coffee cups or metal, which alter the taste of coffee, served in a cup stone or earthenware, because it retains more heat than glass.
