Cake marjoram

  • 25 gr. flour
  • 300 gr. granulated sugar
  • 100 gr. chocolate
  • 300 gr. whipped cream
  • 5 cl. cream
  • 250 gr. Almond
  • 150 gr. Hazelnut
  • 25 gr. nougat powder
  • 25 gr. butter
  • 8 eggs

 

45 à 50 mn.
5 mn. 200°C.(th.6/7)/425-450°F

 


 

 

  1. Grill the almonds and hazelnuts on a rack of the oven.
    Go nuts in a sieve to remove skin, and add the almonds in the bowl of the robot.
    Add the sugar and grind end.
    Pour the flour and mix.
     
  2. Preheat oven to 200° C. (th.6 / 7)
    Separate the white of egg yolks.
    Mount the white snow firm and incorporate them in the preparation.

    Then with a spatula, spread on a plate covered with parchment paper and butter and flour.
    Bake for 5 minutes.
    Let cool and detail into 4 squares.
     

  3. Finely chop chocolate.

  4. Using a palette, go up the 4 layers of cake by intercalating a layer cake, a layer of ganache, a layer of cake, a praline layer, a layer of cake, a layer of white cream, a layer cake.
    Smooth sides of cake with a ganache and sprinkle with chopped toasted almonds or praline.
    Decorate the top with icing sugar.
